Let me tell you, I LOVE pizza! Love it. Could easily eat it several times a week (and sometimes do!) but I’m pretty picky about my pizza too, and sometimes that’s a problem because most places only know how to make pizza one way. So when I ask for light sauce or light cheese, they dutifully nod their heads and proceed to glop on tons of sauce and cheese anyway. Blech!
The Infinitus Pie cart (iPIE) was at the Dock Dogs event in Broomfield and it smelled so good I had to try it. Nice thin, crispy crust, LIGHT sauce and LIGHT cheese. Woohoo! The pizza was fantastic. Then I find out they have a location in Broomfield at 145 Nickel St (just southeast of the old Target, now the At Home store) and I’m extremely happy about that.
They also have one in Wheat Ridge and one on the Auraria campus at the Tivoli. On their homepage you can find their mobile schedule – looks like they’ll be visiting Wonderland Brewery this Saturday – I may have to go and get another pizza AND beer. Here’s their menu – the topping of the month is pickles. I’m not too excited about that.
They also have a lot of toppings to choose from if you want to create your own pizza – I never thought about cream cheese on a pizza. According to their website Pizza Pete and Katie Pie have been eating and loving pizza forever, which I understand! They also make an effort to give back and raise money for charity through their iPIE 10 Day.
And they do mobile catering for private events. Seriously – if you love your pizza – and especially if you long to know there’s better pizza out there than some of the big chain stores, who don’t know how to put a proper pizza together (and no, I don’t mean Papa Murphy’s – they’re pretty good too) then you really need to try iPIE – go into one of their restaurants or hunt down one of the mobile trucks. It’s worth it!
